Prepare the Sauce
In a blender or food processor, combine cilantro, sour cream, lime juice, honey, garlic, olive oil, salt, and pepper.
Blend until smooth and creamy.
Chill in the fridge while you cook the fish.
Cook the Cod
Pat the cod strips dry with paper towels and season both sides with salt, pepper, smoked paprika, and cayenne.
Heat olive oil and butter in a large skillet over medium-high heat.
Add the garlic and sauté for 30 seconds until fragrant.
Place the cod strips in the pan and cook for about 2–3 minutes per side, until golden brown and cooked through.
Spoon the garlic butter over the fish while cooking for extra flavor.
Serve
Spread a layer of cilantro lime sauce on the plate.
Arrange the cod strips on top and drizzle with any remaining butter from the pan.
Garnish with fresh parsley or extra cilantro.
