Divide beef into 4 equal balls (about 4 oz each).
Cook bacon until perfectly crisp π₯, and set aside.
Toast buns until golden brown and slightly crunchy π.

Heat a cast-iron skillet or griddle until smoking hot!
Place 2 beef balls on the pan.
Cover each ball with parchment paper and smash flat using a heavy spatula (about ΒΌ inch thick).

Sprinkle salt and pepper on top.
Cook for about 90 seconds until edges are crispy & caramelized.
π§ Flip & Melt:
Flip patties and top each one with a slice of cheese.
Cook for another 60β90 seconds, until cheese is melted and gooey π€€.
Set aside and repeat for the next two patties.

Spread mayo or aioli on both sides of your toasted buns.
